Our gourmet mushrooms are grown from spawn supplied by a UK repitable supplier. The substrate is is made up in house from spent coffee grounds, pasturised straw and sawdust.

All raw materials are mixed together in precise quantities depending on mushroom variety and season.

The majority of our mushrooms are currently grown in long polythene bags which are hung on racking.

Once bagged and hung the mushroom mycelium runs through the substate developing a strong root like system. This process can take anything from 2 to 12 weeks. All this takes place in a dark warm environment.

Once the bags are fully colonised and free from contamination they are transferred to the fruiting room. This is a totally different environment which triggers the fruiting process. High humidity and fresh air are essential plus a good mix of dark and light.
