Grey Oyster (pleurotus ostreatus) is a very rewarding oyster mushroom to grow. Originating from Bratislava, we selected this strain for its productivity, its colour, and importantly its sweet deep earthy flavour – which ranks it as one of our best tasting oyster mushrooms.
Sometimes called Golden Oysters, they resemble a bouquet of beautiful yellow flowers, and smell like freshy sliced watermelon. When sauteed in oil they have a taste similar to roasted cashew nuts. The yellow colour is lost on cooking turning into a golden brown, but beacause the mushrooms are delicate and thin-fleshed, they can be eaten raw and make a truly stunning edible garnish.
White Oyster mushroom is a variety of tree oyster mushroom (pleutus ostreatus var. florida) that grows in beautiful clusters of creamy white, almost flower like mushrooms. They have a subtle sweet taste and a substantial meaty texture. Tear into strips and sauté with red onions to make a side-dish accompaniment. Or better, incorporate the sautéed mushroom and red onion mixture into a spiced Indian style omlette for an amazing gourmet mushroom breakfast.
